For knockdown texture never use mix that contains aggregate.
Knock the texture down with a knockdown tool.
Use a concrete formulated for this purpose as well as a gun designed for this.

Secure the hopper basin onto the top of the drywall hopper gun then attach the gun assembly and air hose to the air compressor.
After this coat is dry which is pretty fast you can mix up and apply the knockdown coat.
